In the midst of our bajillionith snow storm I wanted to make something quick, easy, and comforting, thus,
Bacon Spinach Pasta
First the bacon, about 9 strips (or more) cut into 2" pieces
Two onions chopped

Once the bacon and onions have carmalized, I added one box of frozen chopped spinach
1 can of evaporated milk
Let everything simmer for a little then add the noodles of your choice

Farfalle (bowtie) noodles are a personal favorite - and the preppiest of the pastas
Top with a little bit of parmesan cheese or pine nuts!
This definitely helped warm us all up!
